Cosmic Cowboy Grill Spokane to Re-Open for Take-Out and Delivery
After closing its doors following Gov. Inslee’s “shelter at home” order, Cosmic Cowboy Grill Spokane in River Park Square will reopen later this week to offer take-out and delivery.
The well-known Coeur’ d’Alene restaurant quietly opened its Spokane expansion at the end of January and was planning a grand opening when they were forced to furlough staff amid the efforts to prevent the spread of COVID-19.
Cosmic Cowboy Grill makes its return in Spokane thanks largely to being approved to participate in the Paycheck Protection Program. The program, led by the U.S. Small Business Administration, is a special loan designed to provide a direct incentive for small businesses to keep their workers on the payroll. Borrowers who meet certain criteria may be eligible to have some, or all of the loan forgiven. Chris White, general manager of Cosmic Cowboy’s Spokane location, says it was important that he get his staff back to work. “A lot of people haven’t even gotten their unemployment checks yet. We’re very happy we can get our staff back to earning some steady income again.”
On target to re-open late this week, the restaurant will offer nearly its entire menu for take-out and delivery. Orders can be placed online, over the phone, or in-person. Cosmic Cowboy will be working with third-party delivery services Door Dash and GrubHub, and is considering doing direct delivery as well. “We’re taking a lot of precautions to make sure we’re being as sanitary and as safe as possible as we go about offering our great food and quality service to the public again,” says White.
Still awaiting its opportunity to have an official grand opening following the end of the “shelter at home” order, Cosmic Cowboy Grill hopes the community continues to give its support to its Spokane location, along with all local small businesses. “I think people don’t always realize how important small businesses are to the economy,” says White. “We appreciate of all the support and look forward to getting through these times together.”
